- 4 Tbsp Mustard
- 4 Tbsp Pork Rub Your Favorite one!
Pat the Pork Belly Dry with a paper towel
Season both sides
Preheat the pellet smoker as low as you can.
Smoke Pork Belly on top rack for at least 2 hours to absorb as much smoke as possible
Move pork belly to the lower rack
Crank up the temperature to 225 °F (107 °C)
Smoke pork belly to 165 °F (73 4C) internal temperature
Apply an optional glaze if you like
Wrap the pork belly in aluminum foil
Cook to an internal temperature of 203 °F (95 °C)
Open the foil package up and let rest for 10 minutes

I have seen people smoke pork belly on a pellet grill several times but never tried it myself because they are hard to find where I live.
