Eddie's Tip! I found that you can make this bacon cheese bratwurst recipe on the grill, in the oven, in a smoker, and even in an air fryer. It is your choice.
After trying several temperatures, I have found that 350°F (176°C) is the best for me.
The cheese you use depends on your taste. I have used many types of cheese, and I like Cheddar cheese the most. Although I have also used plain American cheese.

Bacon-Wrapped Cheese-Stuffed Brats - My Experience

As you might know, I am always trying to improve my recipes. My wife tells me to stop trying to improve something that is good, and in the case of these stuffed bratwurst, she is right, and I have kept this recipe the same now for a long time.
Depending on my taste of the day, I might change out the cheese or use a different seasoning, but that's all.
What I like is that it doesn't take long to prep and to cook these chees filled brats. Usually, I start the pellet grill and heat it to 350°F (176°C), and when it is heated up, the prepping of the brats is done.
I mostly cook them on my pellet grill, but have also cooked them in the oven, indirect on the grill, and my daughter has made them in her air fryer.
