Grilled Stuffed Summer Squash Boats

Nothing screams summer more than fresh Squash and Zucchini.

But as a grill lover, I had to find a way to incorporate my grill and the squash that grows in my garden.

So, I found several recipes that are called grilled stuffed summer squash boats and had to give them my own spin, of course.

How To Make Grilled and Stuffed Summer Squash Boats

This is one of the easiest recipes to make with Squash or Zucchini and does not require a long preparation.

What Do You Need?

This recipe is for four people, but it is easily adjusted to more people.

  • 2 large Squash or Zucchini
  • 4 ounces cream cheese
  • 1 quarter cup salsa
  • Salt and pepper to taste
  • 1 quarter cup bread crumbs
  • 1 quarter cup parmesan cheese
  • 1 quarter of Mozzarella cheese

How To Make Squah Boats

  • Making the boats is pretty easy.
  • Cut the Squash or Zucchini lengthwise.
  • Scoop out the flesh and add it to a saucepan.

Rub the Squash boats with olive oil and bake indirectly on a hot grill for about 10 minutes or until soft.

How To Make The Filling

  • Cook the scooped-out Squah flesh.
  • Cook it in a saucepan until soft.
  • Add the other ingredients, except the Mozzarella cheese, and stir well.
  • Let this cool off.

Putting It All Together

Now you have everything ready to finish the grilled and filled summer squash boats.

  • Fill squash boats with the filling you madeAdd the cheese
  • Place back on the grill
  • Add Mozzarella cheese
  • Grill until all cheese is melted.
